Bob Garner – author, UNC-TV personality and barbecue expert – spoke at Galloway Ridge on Thursday. He described the four basic barbecue sauces – vinegar, light tomato (Lexington-style), mustard, and thick ketchup- and molasses-based dressing – and offered samples before signing copies of his book, Bob Garner’s Book of Barbecue.
Garner said that as more people move into North Carolina from other parts of the country, restaurants are diversifying their offerings.
The best barbecue, he said, needs no sauce at all.
